Rushina M. Ghildiyal hosts an Ice Cream Sundae Challenge for Godrej Natures Basket.

There are many occasions when we envy our chief foodie, Rushina. But unanimously we have concluded that this one tops the list!
On Saturday 14th May 2016 saw the Godrej Nature’s Basket store at Bandra bubbling with excitement. Rushina on behalf of Godrej Nature’s Basket and London Dairy hosted an exciting Ice Cream Sundae challenge as part of London Dairy’s Frozen Desserts Fest. Rushina, talked about ways to have fun with ice cream, taught the kids (and kids at heart) different techniques of combining ice creams with cookies, sprinkles and sauces to create interesting Sundaes. After that, the children participated in the Ice Cream Sundae challenge. Each child was given a station set up with an assortment of icecreams. Sauces, cake, cookies, toppings and sprinkles and 5 minutes time to create a signature Sundae from their imagination. The winners picked by Rushina after tasting all the wonderful creations received envy worthy gift hampers from Nature’s Basket.

My favorite combination, Orange and chocolate. This is a gourmet ‘adult’ sundae for days when us adults need a cool, delicious escape! Add a splash of Cointreau to the sauce to make it even more interesting!

Ingredients
For Orange Rosemary sauce

1 tbsp butter
1 tbsp pepper
4-5 sprigs rosemary
1 cup fresh Cherries
Zest of two oranges
2 cups fresh orange segments, juices reserved

To serve
2 small Waffles or cake slices
4 scoops Double Chocolate icecream
2 tbsp Candied orange peel, finely chopped
3 tbsp Dark Chocolate sauce
5-6 Chocolate wafer rolls
5-6 fresh mint sprigs

Method
To make orange sauce, warm butter in a small pan.
When hot, add the pepper and rosemary and saute untill fragant.
Add half the candied orange peel and orange juice from the cutting of the segments. Stir well and cook till reduced to half and syrupy.
Add the cherries and mix well.
Add the orange segments and mix well. Do not overcook.
Transfer into a glass bowl and keep ready.
To assemble arrange waffles or cake in a platter. Top with ice cream. arrange orange segments and cherries around the ice cream, drizzle with syrup from sauce.
Drizzle with dark chocolate sauce.
Sprinkle with remaining candied orange.
Decorate with chocolate wafer rolls and mint.
Serve.
