Recipe: Vanilla Cupcakes with Butter Cream Frosting

Cupcakes are a quick to put together sweet treat that can be relished anywhere and anytime. They can be served for high tea or even packaged in tiffins for children. Have them at the end of the meal as dessert or simply bite into them to satisfy those sugar cravings.

Here is a simple cupcake recipe that you can easily execute in your home kitchen and enjoy.

Cook Time: 15-20 minutes
Yield: Makes 12 cupcakes

For the Cupcake
100gms Butter, softened
185gms Caster sugar
1tsp Vanilla essence
2 Eggs
200gms Self-raising flour
125ml Milk

For the Butter Cream Frosting
100gms Butter, softened
450gms Icing sugar mixture
63ml Milk
1 drop Food color of choice

For the Cupcake
Preheat oven to 180° Celsius. Line the muffin trays with cupcake wrappers.
Cream the butter, sugar and vanilla with an electric mixer.
Add the eggs, one at a time, and beat until just combined.
Add the flour and milk in alternate batches and stir with a wooden spoon until just combined.
Spoon mixture evenly among the cases.
Bake for 15-20 minutes or until cooked through. Remove from oven and transfer to a wire rack to cool completely.

For the Butter Cream Frosting
For the frosting, use an electric mixer to beat the butter until very pale.
Gradually add the icing sugar while beating.
Add the milk and food color. Beat until well combined.
Fill into icing bag and gently pipe on the cupcakes in desired shape.
