Recipe: Lavender Blueberry Microwave Mug Cheesecake

Here is a quick dessert fix for sugar cravings that one can enjoy with ease at any time of the day.

Cook Time: 20 mins + 2 hours refrigeration

½ cup Cream cheese
¼ cup Cream
¼ cup Sugar
1 Egg, beaten
½ tsp Lemon Juice
1-2 drops Culinary lavender extract
½ cup Blueberry compote
⅓ Digestive biscuits, finely crushed

Whisk together cream cheese, cream and sugar in a large mixing bowl till batter is smooth.
Add the egg and whisk well till combined.
Add lemon juice, culinary lavender extract and mix well.
Divide the blueberry compote equally between two medium sized mugs ensuring it coats the bottom evenly.
Divide the cheesecake batter, pouring it evenly between the two mugs over the compote layer.
Microwave the mugs at highest power for 2 minutes. The cheesecake will look semi cooked and half set. But it is done.
Bring the mugs to room temperature then refrigerate.
Remove from refrigerator. Sprinkle the crushed biscuits on the surface of each mug – you can use a coffee stencil to make attractive designs on top.
Serve immediately.
