Cheesy Pizza muffins are a perfect tiffin treat for children or snack for adults. Here is a quick and easy recipe from our chief foodie Rushina Munshaw-Ghildiyal to get a batch of these delectable muffins ready at home.

Cook Time: 15-20 minutes
1 ½ cup Refined flour
1 tsp Baking powder
¼ tsp Baking soda
¼ tsp Salt
1 tsp Italian herb mix
1 tbsp Castor sugar
1 ½ cup Cheese, grated
2 tbsp Green capsicum, chopped
¾ cup Buttermilk
2/3 cup Tomato ketchup
Preheat oven at 180° C.
Grease muffin tray lightly with oil and keep aside.
Combine all dry ingredients except cheese in a bowl and mix well.
Add a cup of the grated cheese and capsicum.
Whisk together the egg and buttermilk in a separate bowl until well combined.
Add the liquid mix to the dry ingredients and mix well.
Spoon the batter into greased muffin tray until each mold is half full.
Drizzle tomato ketchup over each mold until it covers the batter.
Sprinkle the remaining cheese over each mold.
Bake in preheated oven for 15-20 minutes or until done.
Remove from the oven and cool.
Drizzle with tomato ketchup and serve.
