The hallmark of Assamese Cuisine lies in its simplicity. Cooking techniques are uncomplicated, and ingredients are always in spotlight. Greens, herbs and bamboo shoot are important ingredients and mustard is key for flavour. Fermented foods are abundant in the warmer months, and fish and rice are staples.
Learn four sumptuous home-style Assamese dishes, including pork with bamboo shoot, duck curry, rohu fish and peas curry, and finger-shaped rice flour dumplings. Then relish a lunch spread that features ingredients you are unlikely to find any other part of the country, like Kumal Sawal (rice that needs no cooking), Guti Aloo (tiny baby potatoes), Kola Bora Sawal (black sticky rice) and the famous Bhut Jolokia (ghost chili) – all brought in straight from Assam by the chef!
