APB Culinary Legacy: Karwari Cuisine with Smita Deo

The APB Culinary Legacy series of events celebrate the diversity of Indian cuisine through its home cooks. Born to preserve and propagate regional Indian cuisines that are slowly being forgotten, these events feature authentic ingredients and recipes often sourced directly from that particular region.

This month, we are thrilled to have Smita Deo, author of the memoir ‘Karwar to Kolhapur via Mumbai’ come into the studio with the simple but satisfying cuisine of Karwar. Situated on the coast of western India and flanked by the river Kali, the food of Karwar is a delightful mix of coconut, fish, rice and fresh fruit and leafy vegetables. As a home cook, Smita knows these flavors in her finger tips and this month, you can have a chance to experience her expertise in a unique sit-down lunch.


Futi Kadi
(Tangy, sweet beverage made from kokum pulp and water)

Batatya Phodi
(Crisp, pan fried potatoes)

Chicken Ghee Roast
(Succulent meat cooked in coconut and onions and home made ghee)

Mutton Stew
(Subtly spiced coconut curry with tender chunks of lamb)

Crispy Fried Fish

Sungta Ambat
(Simple curry of fresh prawns and raw mango)

Tori Randoi
(Dried whole pigeon peas and yam in typical saraswat coconut gravy)

Cabbage Upkari
(Shredded cabbage lightly stir-fried in coconut oil)

Beetroot Sukke
(Sweet beetroot in a spicy gravy)

(Simple Karwari dal with onion, green chilies, coconut and pepper)

Neer Dosa
(Thin soft dosa that goes well with the Karwari menu)

Fruit Sasam
(Citrus fruit and coconut relish)

Sabudana Payasam
(Dessert of creamy milk with sago pearls)
